Holiday Kale & Pomegranate Salad

This is THE best holiday/winter salad ever.

It is a simple salad with 3 main ingredients and carries a powerful punch of salty, crunchy and sweet.

Ingredients

  • 3 bushels of Dinosaur Kale, chiffonade
  • 1 pomegranate, seeded
  • 4 cups shitake mushrooms, sliced thinly
  • 4-5 tablespoons coconut oil
  • 1-2 tsp olive oil (to massage the kale)
  • 1/2 teaspoon of sea salt

Procedure

  1. Pre-heat the oven to Broil.
  2. Combine the melted coconut oil and salt with the thinly sliced mushrooms and mix well.
  3. Spread the shitake mushrooms evenly on a baking tray. Make sure the mushrooms are not crowded on the tray and they are not on top of each other. I broil them until they are dark brown. For 4 cups of mushrooms, you will need two baking trays. 
  4. Drain any excess cooking oil from the pan and using a wooden spatula, remove the shitake “mushrooms” and place into a small bowl. 
  5. Remove the pomegranate seeds and place in a small bowl ready to eat. Click here to learn one way to open a pomegranate. 
  6. In a large bowl, add the thinly sliced kale and massage with sea salt and 1 tsp of olive oil for 3-4 minutes. Massaging the kale helps to break it down and soften the kale. This allows kale to be easier to digest and easier to chew. 
  7. Next add your pomegranate seeds and shitake “bacon” and enjoy. I usually drizzle lemon juice and more olive oil as needed.
